"Peace Pie"



Al and I hiked in the Oregon Dunes National Forest Monday, and picked several cups of wild Huckleberries. We discussed making a Huckleberry pie, knowing that it would take more Huckleberries than we picked. We had some peaches in the refrigerator so I attempted to Google Peach/Huckleberry Pie, mistakenly typing peace instead of peach. It was truly serendipitous to find an “Apple-Huckleberry Peace Pie.” Fortunately we had enough apples to make the pie. Below is the link to the story and recipe of Jessica’s Applegren’s Peace Pie.

Says Jessica: “The peace part sounds hokey, but I do think that a little pie could benefit the world and calm our collective nerves. This one is a modern take on a family recipe. The crust is my grandmother Hope’s recipe, which was passed down to my mom and then to me. The filling is my mom’s traditional apple pie recipe, but the added twist comes from the huckleberries, which come straight from my Dad’s ranch in Bandon, Oregon (they grow wild there). The huckleberries give the pie a little tartness and acidity, as well as a gorgeous dark pink tint. The lattice crust is pretty, but it also cuts down on the richness of the pie by lessening the amount of pastry, which is already pretty rich.”

YUM! I haven't had huckleberries for so long, now! We used to pick them as we walked along surveying the forest (I worked as and archaeological technician for the USDA FS for awhile). Love those awesome little berries! Love pie, too -- think I might have to try that one!
